Panfé grows by 20% and aims to open 40 locations by 2027

Panfé closed 2026 with 20% revenue growth and is preparing for a new phase of expansion. The bakery and coffee chain currently has over 26 locations in the main cities of Northern Italy and aims to reach 40 locations by 2027, with at least ten openings already planned.

The plan is part of a sustained growth trajectory: over the past five years, revenue has increased by an average of 18% annually, while customers are estimated to exceed 3 million by 2026. Meanwhile, the network has doubled in size in four years.

The format is based on an all-day offering, from breakfast to aperitif, combining artisanal production with chain organization. The in-house bakery produces over 980 kilograms of baked goods per year, using sourdough starter, biga, and select ingredients. The range of products in the stores reaches approximately 400 items, including 200 food products.

Growth has also affected the workforce. Employees increased from 238 in January to 292 in June. 79% are employed on permanent contracts, while women represent 69% of the workforce, including senior positions.

In November 2025, Panfé obtained UNI/PdR 125:2022 certification for gender equality. This step marks organizational strengthening and signals the company's commitment to supporting the network's development with policies geared toward stability, training, and internal growth.

The medium-term goal remains broader: to reach 100 stores in Italy. For CEO Alberto Salvadego, each new opening must strengthen the brand's presence in the neighborhoods and transform the store into a daily reference point.
