Brimi – Centro Latte Bressanone presents two new products destined to enrich the premium Italian dairy segment: Burrata and Stracciatella. Made in the heart of the Dolomites with mountain milk from high-altitude farms, these products aim to meet the growing demand for fresh, high-value products with a strong local character.
Burrata and Stracciatella are designed to offer an intense sensory experience thanks to the combination of fresh cream and soft stretched curd. The creamy texture and freshness typical of Brimi products make them suitable for a wide range of uses, from enjoying them plain to using them in the kitchen: appetizers, first courses, salads, and gourmet preparations, all the way to contemporary pizza, where dairy toppings play an increasingly distinctive role.
The two new products will be available in major stores starting in fall 2025: Burrata in the 100g format and Stracciatella in the 250g format. For Brimi, they represent a coherent extension of the range, strengthening the company's positioning in the premium fresh market and responding to market trends that prize authenticity, simple ingredients, and certified origin.
Founded in 1969 through the merger of the Sciaves Social Dairy and the Bressanone Dairy, Brimi is now a leading Italian dairy processor, uniquely specializing in the production of mozzarella and related products in South Tyrol. The cooperative valorizes the milk collected daily from its 1.000 farmer members, processing it daily to preserve its quality and freshness.
All production is based on 100% non-GMO Alto Adige milk, a factor that contributes to brand recognition and the creation of a transparent supply chain focused on excellence.
