With the publication in the Official Journal of the decree of 22 January 2025, important changes to the production specifications of Aceto Balsamico di Modena PGI come into force. Among the most significant changes is the introduction of the “Riserva” category, reserved for products aged over five years.

The Consortium for the Protection of Aceto Balsamico di Modena PGI welcomes this change with satisfaction. “These changes guarantee the quality and protection of our product, a symbol of excellence and tradition,” comments President Mariangela Grosoli.

The revisions include labeling updates to enhance the toponym “Modena” and protect consumers from ambiguous wording. The introduction of the “Riserva” category will allow the most valuable productions to be differentiated, highlighting the long aging and high quality of the product.

The updated specification also aims to improve the traceability and management of the product, simplifying the rules for operators in the sector. The possibility of tasting different vintages will enrich the experience of experts and enthusiasts, bringing out the organoleptic nuances developed over time.

The Consortium thus confirms its commitment to protecting the PGI and promoting Balsamic Vinegar of Modena, strengthening its reputation globally and guaranteeing consumers an increasingly authentic and recognizable product.
